It’s finally fall. Tis the season for root vegetables. Oh how I love to enjoy them all year round, but more so in the fall. I put beets high up on the list of my favorite vegetables. Not only do I love the beet root but also the beet greens. So many people throw out those beautiful, tasty greens, but not me. Sauté and enjoy them in a salad such as this one. I have a bunch growing in my garden right now waiting to be picked, unless the bunny family has beat me to them.
